The German people love their red cabbage, and here is a
different recipe that includes pine nuts. You will want to try this!!!
1/2 c. raisins
1/2 c. full bodied red wine
1/2 c. pine nuts
1/4 c. olive oil
1 red cabbage, finely chopped
1 large apple, grated
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 Tbsp. brown sugar
salt and pepper to taste
Soak raisins in wine for 15 minutes. Toast pine nuts in olive oil 3 to 5
minutes. Add cabbage and sautè 1 minute. Add raisins, wine, sugar, spices and
apple. Cover and simmer 30-40 minutes.
